  1. La dacquoise:
    Monter les blancs en neige en ajoutant dès le départ les 50g de sucre en poudre.
    Tamiser sur les blancs neige, la poudre de noisettes, la farine et le sucre glace puis mélanger délicatement avec une maryse.
    Verser la préparation dans une poche à douille et pocher 2 cercles de 20cm.
  2. Saupoudrer d'une fine couche de sucre glace tamisé, laisser croûter 10 minutes, préchauffer le four à 190°C.
    Enfourner 15 minutes en surveillant la cuisson.
    Laisser refroidir.
  3. Le croustillant praliné:
    Faire fondre le chocolat au bain marie.
    Émietter les crêpes dentelles et les incorporer au chocolat fondu.
    Recouvrir un disque de dacquoise de cette préparation et réserver au réfrigérateur le temps de la réalisation de la mousse.
  4. La mousse au chocolat:
    Faire fondre le chocolat au bain marie.
    Faire chauffer le lait. Verser le lait dans le chocolat une fois fondu et mélanger jusqu'à obtenir une préparation lisse et homogène. Laisser tiédir.
  5. Monter la crème bien froide en chantilly.
    Incorporer 1/3 de la crème montée dans le chocolat tiédi puis incorporer le reste délicatement à l'aide d'une maryse.
  6. Montage du gâteau:
    Dans un cercle à pâtisserie, mettre au fond le disque de dacquoise recouvert de praliné.
    Verser la moitié de la mousse au chocolat.
    Poser le deuxième disque de dacquoise et finir avec le reste de mousse au chocolat et lisser le dessus.
  7. Placer au frigo pour 4 heures minimum, le mieux c'est de le laisser une nuit.
    Démouler.
